I am not sure where or when my mom got this recipe. I just vaguely remember eating it from Junior high school age on. When I was in college my roommates and I would take turns making a family dinner for each other. This recipe was a favorite, not only because it was quick and tasty, but also because it could be changed easily. For instance, if you don’t want it to be chicken you could always add chopped ham, sliced beef, or any other meat you have available.


To alter the taste for a beef flavor just change the broth from chicken to beef, and maybe substitute a different cream soup in place of the cream of chicken. There are so many options with this one simple recipe. Remember if you don’t have Self-Rising Flour, you can always substitute All Purpose flour with baking soda and salt. It’s 1 cup flour with 1 tsp baking soda and 1 tsp salt. Also, yes this is a canned item recipe that will make many now a days turn up their noses. Please understand that you are free to make all of these items from scratch if you have the time and patience to do so. But like most college students, new cooks in your home, or busy moms trying to feed a house full of children quickly the canned items work well. So, substitute items as you choose or Enjoy the original as it is.

Mom’s Quick Chicken Pot Pie
Method
- Boil chicken in salted water. When cooked through, save the broth and chop and place chicken in a casserole dish. Boil eggs, peel, slice thinly, and layer over chicken. Pour a can of mixed veggies over the egg and chicken. In a bowl, mix soups and 2 cups chicken broth. Pour mixture over the veggies. Heat oven to 375’F. While preheating oven mix topping for pie. For the topping mix together the flour, melted butter, and milk in a small bowl and pour over everything in the casserole dish. Bake at 375’F for 45 minutes or until crust is fluffy and golden brown.
