We wanted to use up some of our left-over roast one day recently and happened to have some sourdough on hand that needed to get used as well. The combination of the crunchy toast and gravy-soaked pot roast meat made for a delicious dinner. You can use any type of bread for this, we just had a rustic sourdough on hand, and it toasts beautifully. Which is kind of important since you are putting a wet gravy on top. You want to have a crisp bottom to hold up the toppings.


Adding the garlic mayo before putting on the roast adds a nice depth of flavor, so don’t skip that. If you don’t like mayonnaise then just put a little butter and garlic. But trust me on the process and try it with the garlic may at least once. Now you need to make a roux for your gravy if you are like us and have just broth with your roast. I let my roux get a dark color since we are making a beef gravy. If your pot roast has its own gravy cooked in like my mom’s roast then just heat that up with the meat. Making from scratch you use the broth from cooking and add that to a dark roux. Taste before adding any additional seasonings. Cooking the cut-up roast in the gravy will help it break down some allowing it to soak up all that gravy.



Finish it off with your favorite cheese and broil to melt the top. You can get spicy if you like and add some peppers or just leave it as it is. However you decide to make it, Enjoy!

Roast Beef Open Face Sandwich
Method
- Remove any excess fat from the pot roast and set aside. (I prefer to use leftover that has sat in the fridge overnight.) In a large skillet melt butter and create a dark roux with the flour. Once it is a peanut color whisk in broth and add the chopped or pulled pot roast meat. Allow to simmer and fully mix together. Taste and season with garlic powder, salt, and pepper as desired. Mix minced garlic into mayonnaise. Toast pieces of sourdough on one side with a little butter then flip and spread with mayonnaise mixture. Scoop a generous portion of roast and gravy over the mayonnaise side of the toast. Cover in cheese and place under broil to melt cheese before serving.
