It’s really rare for us to have leftover pot roast, but it does happen. Often when that happens there isn’t enough meat left to feed more than one person. If you are like us that last piece ends up stashed somewhere in the back of the fridge and forgotten about, because no one ends up eating the leftovers the very next day.


Instead of it getting forgotten about to the fridge prison I like to plan meals to utilize the leftover items and keep them from going to waste. This is perfect, because you don’t need a whole lot of meat. Just enough to add to the noodles and mushrooms which are the main part of this dish. This is a simple version of a creamy stroganoff sauce and doesn’t use the wine that can be found in other recipes. It instead gets a really creamy sauce with a slight tang from the cream cheese.

It’s a perfect sauce for those who prefer not using any alcohol in their cooking. A few things to remember: Don’t overcrowd your mushrooms when cooking them! Refer back to my tutorial on cooking mushrooms properly if you need a reminder. Next remember to set your cream cheese out to soften. This will help it melt in faster without allowing your milk to overcook first.


And finally add your salt a little at a time. You might not need the whole 1 ½ teaspoons of salt. Depending upon how course your salt is, you might need less.


We love to serve this dish with some steamed broccoli, but you can choose any vegetable of your choice. Enjoy!

Pot Roast Stroganoff
Method
- Sauté the sliced mushrooms until golden in batches, so that each mushroom has room to breath and cook evenly. Once all are golden return mushrooms to pan and add the onion and butter. Continue cooking mushrooms with the onions until onions become soft and caramelized. Add the cream cheese and milk stirring around until sauce begins to thicken. Add seasonings and taste to see if to your liking. Cook noodles in boiling salt water. While noodles are cooking cut the beef roast meat and heat it a little before adding both the noodles and the meat to the sauce. Serve with favorite vegetable and Enjoy!
