
I love to cook the small new potatoes. With that said, I find that I end up cooking them the same three ways all the time.
One night I decided to switch things up a bit. I had a little bacon left in a container after I had used some for cooking with Brussel sprouts. That gave me the idea to toss them in with the potatoes.
It was delicious! And seriously you can’t go wrong with bacon added in. I made a pan small enough to fit in my Ninja counter top cooker. I set it for roast and checked it about every 10 to 15 minutes. It usually takes me about 30 minutes in that to cook them completely. Your oven may vary, so just watch them and stir every 10 minutes or so. Enjoy!

Roasted Bacon Potatoes
Crispy bacon and roasted new potatoes.

Ingredients
- 1-2 pounds new potatoes
- 4-6 slices uncooked bacon
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp garlic powder
Instructions
- Clean potatoes and cut in half or into quarters. Toss them in the oil, salt, pepper, and garlic then spread out evenly on a cookie sheet. Cut the bacon into small pieces and mix throughout the potatoes. Roast in the oven for at 400’F for 30 to 45 minutes. Stir them around every 10-15 minutes to allow all sides to cook evenly. The bacon will be fully crisp and the potatoes soft in the center and slightly golden brown all over.
