Do you like rice crispy treats? How about a bar that is made with the same rice cereal but has a gooey peanut butter coating instead of marshmallows. And even better it’s covered with a layer of chocolate!
My mom made these when I was younger and now, I make them for my boys. They don’t last long in our house, because they are so addictive. Be sure when you make these that you don’t overcook the sugar mixture. You want to just bring it to a bubble then remove from heat. Also be sure to measure the rice cereal. You don’t want to use more than the 5 cups. If you add more than that it will be too dry, and you will lose the wonderful gooey texture. If you are making this gluten free, be sure to check the label of the cereal. Not all rice cereal is gluten free.
You will be tempted to dig in right away after adding the chocolate, but let it cool first before cutting. Make these for your next dessert. I promise you they will be a hit. Enjoy!
Peanut Butter Crispy Bars
- 1 cup light corn syrup
- 1 cup sugar
- 1 cup peanut butter
- 5 cups rice cereal
- 18 oz semi-sweet chocolate chips
- Butter a 9×13 dish and set aside. Cook the corn syrup and sugar over medium heat until it begins to bubble. Add the peanut butter and mix completely. Remove from heat and stir in the cereal. Pour the cereal and peanut butter mixture into the greased dish and press down until spread evenly and smooth on top. Melt the chocolate and pour over the top creating an even chocolate layer. Allow to cool and harden on top before cutting into squares and serving.
