
I often get inspiration from shows, and this one is thanks to Phil Rosenthal during his please feed Phil episode in Portland. One of the food trucks made these fried smashed potatoes. I of course had to try them out. I don’t use the fryer that much since getting an air fryer, but this was worth it! You get that soft texture of a smashed cooked potato with the crispy crunch of a fry on the outside. We tried them two ways: one with salt and pepper, and the second with salt, pepper, garlic, and Parmesan Cheese. The second was definitely our favorite!
These need to be made with small new potatoes. That way you have a full skin on the outside of the potato that can get crispy when fried. Using new potatoes also gives you a thinner skin compared to the larger potato varieties. Clean them well since you will be eating the outside skin. You can cook them one of two ways. Either boil them for 5 to 10 minutes or steam in the pressure cooker for 8 minutes. Once cooked through smash them with a flat surface and then deep fry at 350’F until they are golden and crispy. They are a great alternative to fries. Enjoy!

Fried Smashed Potatoes
Equipment
- 1 fryer
Ingredients
- 1.5 bag baby red or yellow potatoes
- 2 quarts oil canola, peanut, or high heat oil
- 2 tsp salt
- 1 tsp pepper ground
- 2 tbsp parmesan cheese grated cheese
Instructions
- Thoroughly clean outside of potatoes. Boil in a medium pot with 1 tsp salt until tender, or steam in a pressure cooker for 8 minutes. Remove and place on flat surface. Use a flat surface to smash each potato to a 1/4 inch thickness. Be careful not to smash them into crumbled pieces. They need to stay whole. Heat oil to 150'F in a fryer or large pot. Fry each potato until golden on the outside. Place cheese,1 tsp salt, and pepper in a large bowl. Add the fried potatoes and toss until thoroughly coated. Enjoy!
